Removing landing gear shim bolts

I need to remove the landing gear shim bolts but not the shims to install the ski rigging brackets. I have read and will follow the advice of others on being careful to not shear the nut rivets if the bolts are tight, corroded etc. I have a couple other questions for those that have done this.

1. Is using a 7/16" socket on a universal adapter the 'best' method? I have seen some have opened up the sheet metal to allow a straight in shot to the bolts. I am not too keen on that idea.

2. Will the shims stay in place when the bolts are removed if the weight of the airplane is still on the gear? Does the aircraft need to be supported with no weight on the gear to do this?
