Would I need a STC to use pop rivets in leu of bucked rivets to install the rear and skylight windows?

Depends on what you mean by "pop rivets". You can use cherry max or cherry lock or any of the other locking rivets without any extra paperwork. To use hardware store pop rivets would require an stc, or at least a field approval. Imagine 60 or so tiny leaks in the roof...

The locking rivets are comparatively expensive and difficult to remove, so I'm not sure why you'd want to do that, unless it was to avoid needing a second hand to buck the rivets.
